Beer Can Chicken with Squash, Zucchini, and Peppers Recipe

Nothing says summer on a grill more than Beer Can Chicken. If you want chicken that is never dry and tastes great, you need to try this fantastic recipe!

Ingredients:

  • 1 Whole Chicken
  • 1 Squash
  • 1 Zucchini
  • 1 Red Pepper
  • 1 Cup or Can Beer
  • Rib Rub
    • 2 1/2 tablespoons paprika
    • 2 tablespoons salt
    • 2 tablespoons garlic powder
    • 1 tablespoon black pepper
    • 1 tablespoon onion powder
    • 1 tablespoon cayenne pepper
    • 1 tablespoon dried leaf oregano
    • 1 tablespoon dried thyme

Directions:

  1. Wash and dry the chicken removing the giblets and neck.
  2. Place the rib rub in a mixing bowl and cover the entire chicken inside and out with the rub.
  3. Make rough cuts of the squash, zucchini, and pepper.
  4. Using a beer can chicken holder or an open half filled can of beer, place the chicken on a grill on indirect heat and cook for 75 minutes at 400 degrees. If using a beer can chicken holder that allows for vegetables, place the vegetables around the chicken. If not, place the vegetables in foil, add the rub, pour beer on them, and cook on indirect heat.
  5. Carefully remove the chicken from grill and allow to rest for 10 minutes.
  6. Carve, serve with the vegetables, and enjoy!
