Hazelnut Macaroons Recipe

Here is a recipe straight from Germany that will make your weekend or holidays even more special. These macaroons or as they are called in German, Haselnussmakronen, are the perfect way to get the entire family gathered together and make a special treat that will make the holiday season even more memorable.

Ingredients:

  • 4 Egg Whites
  • 3/4 Cup Confectionary Sugar
  • 3/4 Cup of ground Hazelnuts (if you cannot find ground hazelnuts use hazelnut flour or use a coffee grinder to grind whole hazelnuts)
  • Bag of whole Hazelnuts
  • a Pinch of Cinnamon (add to your taste preference)
  • Pinch of Salt
  • German wafers or thin unleavened bread 25-30

Instructions:

  1. Preheat the oven to 300 degrees
  2. Using a hand mixer, beat the egg whites and salt until very firm
  3. Slowly add sugar over the firm egg whites and mix thoroughly
  4. Add the hazelnuts and cinnamon gently using a wooden spoon
  5. Place baking paper on baking sheets
  6. Cut the whole hazelnuts in half
  7. Place the wafers on the baking sheet and add about 2 teaspoons of the batter on the wafer
  8. Put a half hazelnut in the center of the batter
  9. Bake for about 12 minutes checking often to ensure the wafer does not brown
