Sauteed Chicken and Vegetable Penne Pasta Recipe

Ingredients:

  • 2 Chicken breasts grilled and cut into bite size portions
  • 1 Pound of Penne Pasta
  • 2 Cups Extra Virgin Olive Oil
  • 1 Tablespoon Minced Garlic
  • 1/2 Head of Broccoli cut into small florets
  • 1 Small Summer Squash Sliced
  • 1 Cup Fresh Mushrooms
  • 1 Red Pepper
  • 6-8 Stalks Asparagus
  • Fresh Basil or 2 Tablespoons Dried Basic
  • 2 Teaspoons Dried Oregano
  • 1/2 Teaspoon Red Pepper Flakes
  • 1/4 Teaspoon Kosher Salt to taste
  • 1/4 Teaspoon Black Pepper to taste
  • 1/2 Cup Parmesan Cheese

Directions:

  1. In a pot, add the oil, garlic, pepper flakes, and red pepper and cook until peppers begin to soften
  2. Cook pasta according to directions on the package
  3. Add mushrooms, broccoli, squash, asparagus, oregano, basil, salt, and pepper and allow to simmer
  4. Add chicken and parmesan cheese with about 2 minutes cook time left for the pasta and mix in
  5. Drain Pasta
  6. Pour oil combination over pasta, serve and enjoy!
