Ingredients:
- 2 Chicken breasts grilled and cut into bite size portions
- 1 Pound of Penne Pasta
- 2 Cups Extra Virgin Olive Oil
- 1 Tablespoon Minced Garlic
- 1/2 Head of Broccoli cut into small florets
- 1 Small Summer Squash Sliced
- 1 Cup Fresh Mushrooms
- 1 Red Pepper
- 6-8 Stalks Asparagus
- Fresh Basil or 2 Tablespoons Dried Basic
- 2 Teaspoons Dried Oregano
- 1/2 Teaspoon Red Pepper Flakes
- 1/4 Teaspoon Kosher Salt to taste
- 1/4 Teaspoon Black Pepper to taste
- 1/2 Cup Parmesan Cheese
Directions:
- In a pot, add the oil, garlic, pepper flakes, and red pepper and cook until peppers begin to soften
- Cook pasta according to directions on the package
- Add mushrooms, broccoli, squash, asparagus, oregano, basil, salt, and pepper and allow to simmer
- Add chicken and parmesan cheese with about 2 minutes cook time left for the pasta and mix in
- Drain Pasta
- Pour oil combination over pasta, serve and enjoy!
