Lobster Mac & Cheese Recipe

Nothing brightens a cold dreary day in New Jersey like your favorite comfort food. There is no better comfort food than lobster with mac and cheese. Here is Captain Bill’s recipe for his famous Lobster Mac & Cheese. Enjoy remembering, Spring is right around the corner!

Ingredients:

  • 1 Stick of butter (8 tbsp)
  • Kosher Salt to Taste
  • Ground Black Pepper to Taste
  • 1 Pound Cavatappi
  • 1 Medium Shallot
  • 2 Cloves Minced Garlic
  • 2 Tablespoons Tomato Paste
  • 5 Tablespoons All Purpose Flour
  • 1/4 Cup White Wine (Chardonnay or something similar)
  • 4 Cups Heavy Cream
  • 1/2 Teaspoon Paprika
  • 1/4 Teaspoon Cayenne Pepper
  • 1 Bay Leaf
  • 2 Cups Sharp White Cheddar Cheese – Shredded
  • 2 Cups Gruyere – Shredded
  • 2 Raw Lobster Tails
  • 1/2 Cup Plain Panko Bread Crumbs

Directions:

  1. Preheat oven to 350 degrees
  2. Finely chop shallot
  3. Chop lobster to seal bite sized pieces
  4. Melt 2 tablespoons of butter and use to grease a 13 x 9 casserole dish
  5. Using a large sized pot, add water and salt and bring to a boil. Cook pasta to Al dente
  6. In another large sized pot, add the remaining butter melting using medium heat
  7. Once the butter is melted, add the garlic and shallots and cook until translucent
  8. Add salt and pepper to taste
  9. Add tomato paste and flour and stir continuously until cooked – about 4 minutes
  10. At white wine and reduce to half – about 2 minutes
  11. Slowly add cream whisk to remove lumps
  12. Add Cayenne pepper, paprika, and bay leaf
  13. Reduce cream until thick – about 8 minutes
  14. Remove bay leaf
  15. Stir in cheeses combining well
  16. Add lobster meat and stir well
  17. Add pasta and stir
  18. Add to casserole dish
  19. Spinkle the Panko crumbs on top
  20. Bake for 25 minutes at 350 degrees.
  21. Allow to cool for 10 minutes
  22. Serve and enjoy!
