Homemade Meat Ravioli Recipe

Ravioli is a favorite for many. Bringing restaurant quality ravioli to your house is a struggle because the frozen raviolis at the grocery store just don’t taste as good and the Italian markets charge too much for it. Ravioli Shells Ingredients:

  • 3 2/3 Cups All Purpose Flour
  • 4 Large Eggs
  • 1 Tablespoon Oil
  • 1/2 Cup – 1 Cup Water

Ravioli Shells Directions:

  1. Mix all ingredients except the water in a Kitchen Aid bowl. 
  2. Use the dough hook on a Kitchen Aid and mix on medium for 5 minutes adding water as needed. Ensure the mixture is moist but not watery. If you add too much water, add extra flour until you find the right balance.
  3. Put dough in a large bowl and cover with a clean dish towel for 30 minutes at room temperature.
  4. Follow instructions below for filling while you wait.
  5. Using a lump of the dough about the size of an egg, flatten the dough to about 1/8 of an inch.
  6. Run the dough through a pasta roller at the widest setting. Repeat and reduce the setting to the desired size. 
  7. Lay on wax paper
  8. Use a cup or ravioli cutter of desired size and cut the ravioli into round pieces. Keep on wax paper.
  9. Take extra dough and repeat above steps to create more long strips to cut.
  10. Fill immediately and cook (instructions below) in about an hour of completing all steps (when dough hardens enough to move without breaking) or place immediately on a baking sheet lined with wax paper.
  11. Place baking sheet into freezer. Once frozen, remove and put in freezer bags until use.

Ravioli Filling Ingredients:

  • 1 Pound Ground Beef
  • 1 Teaspoon Kosher Salt
  • 1 Teaspoon Ground Black Pepper
  • 1 Teaspoon Basil
  • 1 Teaspoon Oregano
  • 1/2 Teaspoon Minced Garlic
  • 1/4 Teaspoon Fennel Seeds
  • 1/4 Crushed Red Peppers
  • Small container of Ricotta Cheese
  • Grated Romano or Parmesan Cheese (to taste)

Directions:

  1. Pull meat apart and mix with garlic in a frying pan and heat
  2. Mix in basil, oregano, salt, black pepper, fennel seeds, crushed red peppers, and just enough of the Gurus Tomato Sauce to lubricate the mixture. Cook until meat is browned.
  3. In a mixing bowl, combine Ricotta cheese and Grated cheese.
  4. Add meat to mixing bowl and mix well.

Optional Ingredients:

  • Shredded Mozzarella Cheese

Final Instructions

  1. Using the shells made above, place filling on half of the raviolis being sure not to overfill.
  2. Place the empty shells on top of the filled shells and press well to tighten (use fingers and a fork)
  3. Boil water in a large pot adding oil
  4. Carefully add raviolis and cook for about 5 minutes until the raviolis float.
  5. Carefully remove with a large spoon being careful not to break raviolis.
  6. Add the Gurus Tomato Sauce and serve or place in a casserole pan, add the sauce and mozzarella cheese and bake until cheese melts.
