German Potato Salad Recipe

Looking for a fantastic side dish that everyone will love? Try this German potato salad recipe and your kumpels will be raving. This recipe is for 8 people, adjust according to your crowd.

Ingredients:

  • 4 Pounds of Yukon Gold Potatoes
  • 1 Pound of Bacon
  • 1 1/2 Cups Chopped White Onion
  • 2/3 Cup White Vinegar
  • 1/2 Cup Sugar
  • 2 Teaspoons Dijon Mustard
  • 2 Teaspoons Kosher Salt

Directions:

  1. Place potatoes in a large pot and fill with water that just covers the potatoes.
  2. Salt the water and bring to a boil and cook for about 20 minute or until potatoes are tender.
  3. Cook the bacon in a frying pan until completely crisp.
  4. Remove and place on paper towels. Retain the bacon grease.
  5. Slice the potatoes.
  6. Cook the onions in the bacon grease until translucent.
  7. Add the vinegar, sugar, salt, and mustard and salt and whisk while it cooks until it thickens.
  8. Add the potatoes.
  9. Crumble the bacon into small pieces and add.
  10. Mix well, serve warm , and enjoy!
