Here is a fantastic Sauerkraut recipe that will make you think you are in Germany. Enjoy this with a traditional German meal, as a Thanksgiving tradition, or for your own Oktoberfest!
Ingredients:
- Two pounds of sauerkraut
- Bacon grease of 6 slices of bacon
- Chop the cooked bacon into small bits
- One medium chopped onion
- Four ounces of applesauce
- One teaspoon caraway seed and /or five juniper berries
- 1/4 cup Peppercorns
- 3/4 cup Sugar
- Medium potato grated (optional)
Directions:
- Drain the sauerkraut, if you wish a less intense flavor you can rinse it in cold water.
- Put the bacon grease in a pot and add the onions.
- Cook the onions until they are translucent. Do not allow them to brown.
- Add the sauerkraut, caraway seeds, applesauce, and sugar and mix well.
- Add the potato (optional: The potato adds body)
- Cook on low heat for four hours.
- Enjoy a fantastic German tradition.
