Pasta Carbonara

Enjoy this Pasta Carbonara recipe with family or for a romantic dinner complements of your Official Town Guru.

Ingredients:

  • 1 Pound of the Pasta of your choice
  • 3 Tablespoons Extra Virgin Olive Oil
  • 5 Ounces Pancetta 
  • 2 Teaspoons Minced Garlic
  • 2 Eggs
  • 1/2 Cup Parmasan Cheese
  • 1/2 Cup Romano Cheese
  • Ground Black Pepper to taste
  • Parsley Flakes as garnish

Directions:

  1. Boil water for pasta
  2. Cut pancetta into cubes
  3. Add pasta and cook until al dente, remove 1/2 cup of water and set aside right before draining 
  4. While cooking pasta heat olive oil and cook pancetta on medium heat for about 3 1/2 minutes
  5. Mix eggs, cheese, and black pepper until completely combined (no lumps) in a mixing bowl.
  6. Add garlic and cook for one minute then turn off burner
  7. Immediately add hot pasta in olive oil mixture and ensure it is fully coated
  8. Add egg cheese mixture and fully mix. Add water as needed to get desired consistency 
  9. Garnish with parley and serve
