Ingredients:
- 1 Pound of the Pasta of your choice
- 3 Tablespoons Extra Virgin Olive Oil
- 5 Ounces Pancetta
- 2 Teaspoons Minced Garlic
- 2 Eggs
- 1/2 Cup Parmasan Cheese
- 1/2 Cup Romano Cheese
- Ground Black Pepper to taste
- Parsley Flakes as garnish
Directions:
- Boil water for pasta
- Cut pancetta into cubes
- Add pasta and cook until al dente, remove 1/2 cup of water and set aside right before draining
- While cooking pasta heat olive oil and cook pancetta on medium heat for about 3 1/2 minutes
- Mix eggs, cheese, and black pepper until completely combined (no lumps) in a mixing bowl.
- Add garlic and cook for one minute then turn off burner
- Immediately add hot pasta in olive oil mixture and ensure it is fully coated
- Add egg cheese mixture and fully mix. Add water as needed to get desired consistency
- Garnish with parley and serve
