Spaetzle with Pork Cutlets

Spaetzle is a versatile German dish that can be a side dish, main meal, and enjoyed in a lot of ways. Here is a great meal with pork cutlets.

Ingredients:

  • 17.6 Oz Bag of Spaetzle (or egg noodles)
  • 4 thin pork cutlets or fillets
  • 8 thick cut slices of Bacon
  • 4 ounces pesto sauce
  • 1 cup Vegetable Stock
  • Salt
  • Pepper
  • Extra Virgin Olive Oil

Directions:

  1. Flatten cutlets
  2. Spead the pesto on top of the filets and add 2 slices of bacon on top of each cutlet
  3. Roll the cutlet up and secure it with cooking twine or a toothpick
  4. Heat olive oil in a frying pan
  5. Cook the cutlets equally on all sides until slightly browned
  6. Add vegetable stock and allow to simmer for about 12 – 15 minutes
  7. Cook Spaetzle in salted water for 12-13 minutes (according to package)
  8. Place pork cutlets and spaetzle on plates and add salt and pepper to taste
  9. Enjoy with family and Kumpels
