Pumpkin Alfredo Recipe

As the weather cools down across much of America, there are two favorite ingredients this time of year. Pumpkin and pasta. We have combined them with this fantastic Pumpkin Alfredo recipe.

Ingredients:

  • 1 box Fettuccini noodles
  • 1 1/2 cups pumpkin puree
  • 1/2 – 1 cup coconut milk
  • 1/2 cup cooking white wine
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes

Directions:

  1. Cook the pasta to Al Dente.
  2. Drain when finished.
  3. Heat the pumpkin puree over medium high heat.
  4. Add the coconut milk and whisk until smooth.
  5. Add the white wine, cheese and seasoning and whisk until fully combined.
  6. Allow to heat for 5 minutes on medium heat together until completely heated.
  7. Add the Fettuchini and mix.
  8. Leave the pasta in the sauce for another 5 minutes.
  9. Enjoy!
