BBQ TIP OF THE DAY: BASIC BBQ GRILLING & SMOKING RULES OF THUMB

  • Don’t cook cold meat – always try to bring meat to room temperature before cooking in order to best keep the outside of the meat burning or charring before the inside gets to the desired cooked temperature.
  • Preheat properly – for the best BBQ flavor always preheat your smoker or grill to the desired cooking temp.
  • Don’t poke & prod – piercing meats and sausages and pressing down on meats while cooking releases the meats juices which will dry out whatever you are cooking. When grilling, only turn meats on the grill over once or twice at most!
  • Always remember food hygiene – always put your cooked meats on a clean plate or cutting board rather than the one it was prepped using. Also never re-use marinade that had raw meat in it.
