New York Bagel Recipe

Anyone that has had a New York or Jersey Shore bagel knows there are no other bagels like them in the world. Many people won’t eat bagels made anywhere else. This fabulous recipe allows you to make them wherever you are! You may have to play with the flour – water ratio based on your water, humidity, and elevation, but if you follow this recipe, you will swear you are in Brooklyn, Manhattan, or along the Jersey Shore.

Ingredients:

  • 1 Packet Active Dry Yeast
  • 1 Tablespoon, 1 1/2 Teaspoons Granulated Sugar
  • 1 1/3 Cups Warm Water (105-115 degrees)
  • 3 1/2 Cups Bread Flour
  • 1 1/2 Teaspoons Kosher Salt
  • Optional Toppings
  • Blended Oil

 

Directions:

  1. Put yeast and sugar in a mixing bowl then add 1/2 cup of warm water. Let sit 5 minutes then stir until mixture dissolves
  2. Mix Flour and Salt in stand mixer bowl then create a well in the middle. Add the yeast sugar mixture
  3. With a dough hook, mix on slow for about 10 minutes
  4. Slowly add 1/2 – 2/3 cup of warm water. Dough should be moist and firm. Add additional flour or water in small amounts (about 1 T at a time) as needed.
  5. Lightly Brush a bowl with oil add the dough and turn to coat.
  6. Cover with a towel and allow to rise in a warm place for about an hour
  7. Once the dough has rested, push the dough down. You will know it is ready if the dough doesn’t bounce back. Press a finger in it and if it doesn’t bounce back, it is ready.
  8. Separate the dough into 8 equal parts. 
  9. Make smooth round balls out of each piece.
  10. Shape the bagels by gently using a finger to put a hole into each bagel. 
  11. Stretch the bagels into a ring/ bagel shape about 1/3 – 1/2 of the size of a bagel (about 1 1/2 inches).  Place on baking sheet. Revisit each bagel to ensure it hasn’t lost it’s shape.
  12. Cover with cling wrap and allow bagels to proof for an additional 20 minutes at room temperature. 
  13. Bring a large pot with water to a boil. Preheat the oven to 425 degrees. 
  14. Carefully place the bagels in batches with plenty of room in the pot and allow to boil for 2 minutes until they are floating. Flip each bagel and boil for an additional 2 minutes.
  15. Add toppings (sesame seeds, poppy seeds, caraway seeds, cinnamon sugar, coarse salt, minced fresh garlic, minced fresh onion, everything bagel seasoning, or any style bagel you love).
  16. Bake for about 20 minutes until golden brown.
  17. Cool on a metal rack then enjoy or store in an airtight container for up to 2 days. Freeze for longer storage.
