Shrimp Empanada Recipe

Now that you know how to make empanada dough from our post last week, let’s give you something to fill it with! Here is a fabulous recipe for shrimp empanada’s complements of your Official Town Guru.

Ingredients:

  • 36 4 Inch Round Empanadas (Recipe Here)
  • 2 1/2 Pounds of Small or Medium Shrimp cleaned and chopped
  • 1/4 Cup Olive Oil
  • 1 Cup Sweet Onion Finely Chopped
  • 2 1/2 Teaspoons Minced Garlic
  • 2 1/3 Cups Diced Tomatoes
  • 2 Tablespoons Cumin
  • 2 Tsp Chili Powder
  • 3/ Cup Cilantro Chopped
  • Kosher Salt to Taste
  • Ground Black Pepper to Taste

Directions:

  1. In a pot, sweat the onions and garlic in the olive oil using medium heat.
  2. Add tomatoes, cumin, chili powder and cook for 3-5 minutes.
  3. Add cilantro and shrimp and and simmer until shrimp are cooked.
  4. Add salt and pepper to paste. 
  5. Remove from heat and refrigerate.
  6. Lay out the empanada dough on wax paper, a baking tray, or a clean work surface.
  7. Spoon 1 1/2 ounces of filling in the center of each piece of dough.
  8. Fold the dough over and crimp the sides with a fork.
  9. Deep fry in 350°F oil until golden brown.
