Ingredients:
- Large Yellow Onion Chopped
- 4 Teaspoons Minced Garlic
- 4 – 28 ounce cans San Marzano Peeled Tomatoes
- 1 Pork Hock
- 30 Fresh Basil Leaves Chopped
- 1/2 Cup Extra Virgin Olive Oil
- 2 Bay Leaves
- 1 Teaspoon Dried Oregano
- 1 Teaspoon Dried Thyme
- Kosher Salt to Taste
Directions:
- Using a stock pot, heat olive oil and cook onions with a pinch of salt until they are translucent.
- Add the garlic and cook just until the garlic is aromatic.
- Reduce the heat to the lowest setting and add the tomatoes.
- Crush the tomatoes then add the bay leaf, oregano, thyme, and pork hock.
- Cover and allow to simmer for about 3 hours making sure the tomatoes do not burn.
- Turn off the flame, add the kosher salt to taste and fresh basil leaves.
- Remove Bay Leaves and Pork Hock
- Serve or jar and refrigerate or freeze.
