Ingredients:
- 5-6 Pound Boneless Rib Roast
- 1 1/2 Cups Low Sodium Beef Broth
- 1/2 Cup Dijon Mustard
- 1/2 Cup Shallots – finely chopped
- 6 Cloves Minced Garlic
- 2 Teaspoons Fresh Thyme Leaves – finely chopped
- Kosher Salt
- Ground Black Pepper
- Meaty Beef Bones to place Rib Roast on
Directions:
- Season roast with 2 teaspoons of kosher salt and 1 teaspoon of black pepper
- Combine dijon mustard, shallots, garlic, and thyme. Save 1/4 cup of mixture for au jus.
- Spread remaining mixture on top and sides of roast
- Let roast stand at room temperature for about an hour
- Preheat grill at 350-375 degrees
- Use 2 foil pans (doubled up for strength). Place beef bones in the pans as a stand for the roast. Place roast on the bones fatty side facing up. Place the pan on an area of the grill where it will get indirect heat with the thicker end closest to the hotter area of the grill.
- Grill between 350 and 375 degrees with lid closed on indirect heat for about 2 hours flipping once after 1 hour until the thickest part of the roast is 120 degrees for medium rare. Begin checking the temperature after about an hour and 15 minutes.
- Remove from the grill, loosely cover with aluminum foil, and allow to sit for about 25 minutes.
- Place roast on a cutting board
- Remove bones and pour out clear fat from the pan.
- Place remaining contents from pan including browned bits from the pan into a sauce pot and cook contents on medium heat until it sizzles.
- Add broth and remaining mustard mixture
- Cook until the mixture is hot then season with salt and pepper
- Cut into about half inch slices
- Serve with sauce and enjoy!
