Captain Bill’s Parmesan Crusted Grouper

If you are like me, a highlight of a winter trip to the Gulf coast of Florida includes plenty of grouper. Here is a great recipe that brings the taste of the gulf to your home!

Ingredients:

  • 1 Pound of fresh grouper
  • 1 egg
  • 2 tablespoons of buttermilk
  • 1/3 cup graded parmesan
  • 2 tablespoons flour
  • 1/2 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon pepper

Directions:

  1. Beat the egg and mix with the buttermilk.
  2. Place the grouper in the mix and let sit refrigerated for 30 minutes.
  3. Preheat oven to 350 degrees.
  4. Combine parmasan, flour, paprika, salt, and pepper in a gallon freezer bag.
  5. One piece at a time place grouper in the freezer bag and shake until coated.
  6. Place on non stick baking sheet or oil the baking sheet.
  7. Bake for about 30 minutes until fish flakes with a fork.
