Perfect Pasta Recipe

Once you try this pasta recipe, you will never buy pasta from a box again and will scoff at those that do!

Ingredients:

• 3 2/3 Cups All Purpose Flour
• 4 Large Eggs
• 1 Tablespoon Oil
• 1/2 Cup – 1 Cup Water

Directions:

1. Mix all ingredients except the water in a Kitchen Aid bowl.
2. Use the dough hook on a Kitchen Aid and mix on medium for 5 minutes adding water as needed. Ensure the mixture is moist but not watery. If you add too much water, add extra flour until you find the right balance.
3. Put dough in a large bowl and cover with a clean dish towel for 30 minutes at room temperature.
4. Using a lump of the dough about the size of an egg, flatten the dough to about 1/8 of an inch.
5. Run the dough through a pasta roller at the widest setting. Repeat and reduce the setting to the desired size.
6. Cut the pasta to desired shape (use a spaghetti or fettuccini pasta roller attachment, a sharp knife, or a cup or ravioli cutter, etc)
7. Lay on wax paper and allow to dry (unless making a filled pasta).
8. (Optional) If making a filled pasta, fill immediately and cook within an hour or place immediately on a baking sheet lined with wax paper. Place baking sheet into freezer. Once frozen, remove and put in freezer bags until use.
9. Add the Gurus tomato sauce or Alfredo sauce and enjoy!
