RECIPE OF THE WEEK: Chocolate BBQ Sauce
Chocolate seems to be a popular item to mix with different foods – from chocolate covered bacon to this recipe for chocolate BBQ sauce.
Ingredients
4oz apple cider vinegar
8oz of your favorite Pig Pit BBQ sauce
14oz of vegetable stock
1tbl butter
1/2 an onion, small dice
2 Roma tomatoes, small dice
2 tablespoons chopped fresh cilantro
4 minced garlic cloves
1.5oz brown sugar
4tsp chili powder
1/4tsp ground cumin
1/4tsp ground cinnamon
1/8tsp ground cloves
3/4tsp salt
1/2tsp ground black pepper
2oz dark chocolate
Preparation:
Melt butter over medium heat in a saucepan. Add onion and garlic, sautéing them for 5 minutes or until golden brown. Stir in tomatoes and continue to sauté for 5 more minutes before adding the sugar and chili powder. Mix thoroughly and cook for 5 more minutes. Reduce the mixture in the vinegar until it has a pasty consistency. Add in all other ingredients except the cilantro & chocolate and bring to a boil after mixing well. Lower the heat and let simmer for half an hour. Finally, add the cilantro & chocolate and let the mix simmer for another 5 minutes before removing from the heat and let stand for 10 minutes. Puree the sauce in a blender and cool for 12 hours before use.
Brush the sauce on beef tenderloin or scallops while cooking and ENJOY!
