Captain Bill’s Crab Corn Bisque

Corn and delicious crabs. Add both to a bisque and you have a delicious combination that is sure to become an instant favorite to everyone you serve it to.

Ingredients:

  • 1/2 cup of butter
  • 10 1/2 cups chicken broth
  • 1 large onion
  • 6 cloves of garlic
  • 4 bay leaves
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon cayenne pepper
  • Salt & Pepper
  • 8 ears of corn
  • 1 cup of half and half
  • 6 tablespoons flour
  • 1 cup milk
  • 2 Cups fresh lump crabmeat

Directions:

  1. Finely chop the onion.
  2. Cut the kernels of corn from the cob.
  3. Using a large pot, melt the butter using medium heat.
  4. Stir in the onions and cook until translucent.
  5. Add the chicken broth and bring the combination to a boil. Stir in garlic, bay leaves, cayenne pepper, Cajun seasoning, salt, and pepper.
  6. Stir in corn and simmer for 10 minutes over medium low heat. Stir occasionally.
  7. Remove 2 cups of soup and allow to cool slightly. Put cup into a blender and add the half and half. Puree for 45 seconds and set aside.
  8. In a small bowl wisk the flour and milk. Slowly stir into simmering soup stirring for 2 minutes.
  9. Stir in the pureed mixture.
  10. Reduce the heat to low and stir in the crab meat. Cook for five minutes.
