Ingredients:
1 1/4 cup of all purpose flour
3 Tbsp sugar
2 Tsp baking powder
1 1/4 Tsp pumpkin pie spice
3/4 Tsp salt
1 1/3 Cup milk
3/4 Cup canned pure pumpkin (not pumpkin pie mix)
4 Large eggs, separated
1/4 Cup butter, melted
1 Tsp vanilla extract
Directions:
- In a large bowl mix flour, sugar, baking powder, pumpkin pie spice, and salt.
- In a medium bowl, whisk together milk, pumpkin, egg yolks, melted butter, and vanilla.
- Add pumpkin mixture to dry ingredients and mix well.
- In a separate medium bowl, use an electric mixer to beat egg whites until stiff but not dry. Fold whites into batter.
- Brush a large, non stick skillet with oil and heat over medium heat.
- Working in batches, pour 1/3 cup portions onto hot skillet.
- Cook until bubbles form on surface of pancakes and bottoms are brown.
- Serve warm with butter, syrup, and whipped cream.
